Before Old Man Winter arrives to shake your hand, you need to start focusing on building your immunity. Also, the gym is known to be a breeding ground for all kinds of germs, and it’s important that you prepare for this so that you don’t end up catching the flu or getting ill and losing all of your hard work.

You probably have a bountiful crop of organic vegetables coming out of your gardens–or the local Farmer’s Market–and wonder what you should do with them. This simple, delicious recipe is full of Vitamin C, Vitamin A, minerals, plant protein and fiber.

Tomato Vegetable Soup

Pre-heat oven to 375°.

Feel free to add other vegetables that you enjoy–the more the merrier! Our recipe uses:

Heirloom Tomatoes

Red, Green, Yellow and Orange Peppers (sweet or regular)

Large white onion

Garlic cloves

1 Tbsp. Olive oil

Mrs. Dash, other spices and pepper to taste

Wash all vegetables before use. Chop vegetables into large chunks and place on a baking sheet or roasting pan. Drizzle olive oil over the ingredients and season with spices and pepper. If you like a little heat, add crushed red pepper flakes. Roast in the oven for 45-60 minutes. Remove from oven and let cool. Place vegetables in a large bowl or pan and use an immersion blender to puree ingredients. Enjoy!
