You probably have a bountiful crop of organic vegetables coming out of your gardens--or the local Farmer's Market--and wonder what you should do with them. This simple, delicious recipe is full of Vitamin C, Vitamin A, minerals, plant protein and fiber.
Tomato Vegetable Soup
Pre-heat oven to 375°.
Feel free to add other vegetables that you enjoy--the more the merrier! Our recipe uses:
Red, Green, Yellow and Orange Peppers (sweet or regular)
Large white onion
1 Tbsp. Olive oil
Mrs. Dash, other spices and pepper to taste
Wash all vegetables before use. Chop vegetables into large chunks and place on a baking sheet or roasting pan. Drizzle olive oil over the ingredients and season with spices and pepper. If you like a little heat, add crushed red pepper flakes. Roast in the oven for 45-60 minutes. Remove from oven and let cool. Place vegetables in a large bowl or pan and use an immersion blender to puree ingredients. Enjoy!
